Celery is a biennial plant with pinnate leaves and creamy-white flowers. It is cultivated for its petioles, which are used as a vegetable in North America and Europe, and its hypocotyl, which is used as a root vegetable in Europe. The leaves are flavorful and can be used in soups and stews, or dried and sprinkled on fish or meats. Celery seeds can be ground to make celery salt, which is used as a seasoning in various dishes. The naturally occurring nitrites in celery also help preserve cured meats.

Raw celery is mostly water, with 95% of its content being water. It contains 3% carbohydrates, 0.7% protein, and very little fat. A 100-gram serving of celery provides 16 calories of energy. It is notably high in vitamin K, supplying 28% of the Daily Value, but does not contain significant amounts of other micronutrients.

It's believed that celery was cultivated during classical antiquity.

In ancient Greece, there was evidence of celery being used. Homer's Iliad talks about wild celery growing in the marshes of Troy, and in the Odyssey, there are mentions of meadows with violet flowers and wild celery near Calypso's Cave.

Celery Powder Seasoning Blend. 

Ingredients: 

2   tablespoons celery powder             1  tablespoon onion powder
1   tablespoon garlic powder               1   teaspoon paprika
1/2 teaspoon black pepper                1/2 teaspoon dried thyme
1/2 teaspoon dried oregano                1/2 teaspoon sea salt

Directions: 

1 ) In a small bowl, combine all the ingredients.
2 ) Stir well until the spices are evenly mixed.
3 ) Store the seasoning blend in an airtight container in a cool, dry place.
4 ) Use the celery powder seasoning blend to flavor meats, poultry, seafood, soups, stews, salads, and vegetable dishes.

 





Celery Powder Ranch Dip.

Ingredients: 

1   cup Greek yogurt or sour cream            1   tablespoon celery powder
1   teaspoon onion powder                   1   teaspoon garlic powder
1/2 teaspoon dried dill                       1/2 teaspoon dried parsley
1/4 teaspoon sea salt                        1/4 teaspoon black pepper

Directions: 

1 ) In a medium-sized mixing bowl, combine all the ingredients.
2 ) Stir well until the spices are evenly incorporated into the yogurt or sour cream.
3 ) Taste the dip and adjust the seasoning if needed.
4 ) Cover the bowl and refrigerate the celery powder ranch dip for at least 1 hour to allow the flavors to meld.
